Pan Cooked Halibut With Pineapple Mango Topping

Recently my In-Laws planned a trip out to our mountain home. I have been on planning mode since I found out that we would have a house full of 18 people! These visits are always wonderful. Since we moved out of state last year we haven’t had the opportunity to see much of our family. For my kids, this visit meant non-stop cousin action. But for me- well this meant dazzling everyone with something delicious to catch their eye, warm their belly, and fill their soul. So I set out planning days worth of meals; but I want to share with you one that was a huge hit! This Pan Cooked Halibut with all the fixings is sure to impress.

Let me describe this Halibut to you!

Halibut

This Halibut is cooked in a garlic & ginger infused butter sauce. It has the perfect crispy skin yet is still flaky and moist. The best part is in the topping! This is a salsa inspired topping made with a pineapple and mango. These are mixed with a sauteed blend of red onion, garlic, ginger, jalapeno, and a hint of lime. Finish this off with a bit of cilantro for color and a pop of flavor and you have a dish that is sure to have your guests wanting more!

This is best serves with a side of whole wheat garlic butter noodles, some steamed vegetables, and a side of mushrooms. My favorite would be these Mouth Watering Stuffed Mushrooms

I promise that the prep work takes longer than the cooking.

Pineapple-Mango Halibut Prep

Start off by chopping all of your ingredients. Everything should be finely chopped except for the pineapple and mango. Those should be diced. Once you have everything prepared the cooking goes pretty quickly. For the “salsa” being by adding your butter, ginger, and onion into your pan and saute for 2 minutes on medium heat. Proceed by adding the garlic and jalapeno. Allow to saute for 2 more minutes. Add the pineapple, mango, and lime juice but quickly stir for another 2 minutes. Let this mixture cool for 5 minutes a roughly toss in the cilantro for color and flavor.

Onto the Halibut

Begin by sauteing a bit of ginger and garlic in butter. Meanwhile, generously season your fish on both sides with salt and pepper. Turn the heat in your butter saute to high heat and add the fish skin side down. Cook on high for approximately 3 minutes. before turning down the heat to medium and flipping the halibut. Juice the lime into the pan and give it a quick swirl. Cook for approximately another 3 minutes, or until the fish is done.

I promise this dish will make you want to grab some more seafood and do it all over again. It is perfect for any special occasion or when you want something full of flavor but still light and healthy. It is made best with the freshest of ingredients and cooked to perfection!  Personally, I blended up a bit of that Pineapple-Mango topping and added the puree to the top of the fish as well. Serve this with your favorite side dish and enjoy.

Ingredients

  • PINEAPPLE MANGO TOPPING
  • 1/3 C Red Onion diced
  • 1/4 A Jalapeno finely chopped
  • 2 Tbsp Fresh Ginger finely chopped
  • 1 Garlic Clove finely chopped
  • 1 Mango diced
  • 1 C Pineapple
  • 1/4 C Cilantro chopped
  • 1/2 Lime
  • 1 Tbsp Butter
  • Salt to taste
  • FOR HALIBUT
  • 1 Piece Halibut
  • 1 tsp Garlic Clove finely chopped
  • 1 tsp Fresh Ginger finely chopped
  • 1/2 Lime
  • 2 Tbsp Butter
  • Salt & Pepper to taste

Instructions

  1. FOR PINEAPPLE- MANGO TOPPING

  2. On medium heat- Add butter, ginger, & onion

  3. Saute for 2 minutes

  4. Add garlic & jalapeno

  5. Add pineapple, mango, & lime juice

  6. Cook for 2 minutes

  7. Let cool for 5 minutes

  8. Lightly toss in cilantro

  9. FOR HALIBUT

  10. On medium heat- add butter, ginger, & garlic

  11. Saute for 2 minutes

  12. Salt & Pepper Halibut

  13. On high heat- place halibut skin side down in pan

  14. Cook for approximately 3 minutes

  15. Turn heat to medium- flip halibut

  16. Add lime & cook for approximately 3 minutes (or until done)
