Pan Cooked Halibut With Pineapple Mango Topping

Recently my In-Laws planned a trip out to our mountain home. I have been on planning mode since I found out that we would have a house full of 18 people! These visits are always wonderful. Since we moved out of state last year we haven’t had the opportunity to see much of our family. For my kids, this visit meant non-stop cousin action. But for me- well this meant dazzling everyone with something delicious to catch their eye, warm their belly, and fill their soul. So I set out planning days worth of meals; but I want to share with you one that was a huge hit! This Pan Cooked Halibut with all the fixings is sure to impress. Let me describe this Halibut to you! Creamy Broccoli Cheese Soup

Winter is my favorite season. I love the crisp, chilly weather and all of the cuddles in front of the fire. I love winter so much that our family packed up two years ago and moved to the mountains so we could enjoy the snow. However, when January came around this year, we still had no snow.- *gasp & cue the sad face*. Needless to say the kids, and myself, have been extremely disappointed. But finally it happened! Last week we got a little bit of snow! I was so excited that by the time it started to fall our dinner menu for the night quickly changed and we made a quick dash to the grocery store for some snowy weather must-haves. Flu-Fighting Chicken Noodle Soup

There’s nothing more soothing when you are sick than having a nice hot bowl of chicken noodle soup. Not only does it soothe a sore throat, but it warms the belly and provides a relaxing sensation. Chicken noodle soup is extremely versatile as well, which makes it so easy to customize to your families preferences. In our home, sometimes we opt for a simple chicken noodle soup while other times I like to add in a whole variety of vegetables. However, when the fall and winter seasons hit, I tend to make sure that my chicken noodle soup is packed with tons of flu-fighting backup! Unfortunately, my children (and husband) are picky when it comes to what vegetables they eat. So to make sure everyone gets the nutrients they need, my flu-fighting chicken noodle soup takes an extra, but simple, step! I begin by filling a large stock pot 3/4…

Super Delicious Parmesan Chicken

It is the start of a new school year again and as always, I have been hustling around the house as busy as a bee in preparation for tomorrow; just hoping to have a smooth day finally (we all know how crazy the first few weeks of homeschool is when trying to find a routine). So I needed something quick, easy, and still delicious for dinner. After all, I am in no mood to have a sink full of dirty dishes, nor a messy stove to pick up. The first thing that came to mind was my super delicious Parmesan Chicken! Chicken is a staple food in our home. It is cost efficient and cooks rather quick when thinned out. Plus it is extremely versatile; I can think of 10 things to do with chicken breasts in just a couple minutes. Preparing this dish is a 4 step process (3 just…
