The Misguided Homeschool Statement: “I Could Never Do That”

I have been homeschooling for 3 years now and although I still consider myself new and always learning, I regularly get asked those questions. Questions like “How do you homeschool four different grades at once?”, “What made you choose to homeschool?”,  and so many others. I also hear things like: “Wow, you must never have any time for yourself!” However, there is one statement that I can never wrap my head around… That misguided homeschool statement: “I could never do that!” You see, when I decided to homeschool my children I broke the mold from everyone that I knew. Crispy Chicken Taquitos

I love Mexican food. I love simple food. Even more, I love anything that I can eat with some delicious guacamole. So, it is no surprise that one of my go-to dinners after a busy day are these Crispy Chicken Taquitos. They combine just a few ingredients and are fried to perfection. I like to serve them with some rice and beans at dinner and the left overs make the perfect lunch time meal the next day. The best thing about this recipe is it is completely “to taste”; meaning that you add as little or as much as you like of almost everything. I start off by boiling the chicken. Geography is an important subject to incorporate into weekly lessons outside of a history curriculum. Not only does it teach children where places are, which is what many of us associate the subject with, but it can really connect a child to the world! Teaching geography can bring the places, people, lifestyles, and cultures from around the world to life. Along with this, children get to explore the beautiful geological wonders of the world, the many different environments begin to make sense, and historical civilizations become easier to understand. Winter is my favorite season. I love the crisp, chilly weather and all of the cuddles in front of the fire. I love winter so much that our family packed up two years ago and moved to the mountains so we could enjoy the snow. However, when January came around this year, we still had no snow.- *gasp & cue the sad face*. Needless to say the kids, and myself, have been extremely disappointed. But finally it happened! Mouth-Watering Stuffed Mushrooms

I have been making stuffed mushrooms for some time now. My husband loves them and they pair perfectly with anything; steak, chicken, seafood, barbecues… ANYTHING. They are just the perfect bite-sized, finger food side dish of all time!  My original recipe was great until we visited Bj’s Brewery in California and my husband ordered their stuffed mushroom appetizer. It was an instant love-at-first-taste. And since then, everything changed. I worked hard to create something similar to what they served and after many trial and errors, I created something similar that has since been the star of many meals and get-togethers in our home. They are cheesy, they are flavorful, and they are topped with a delicious homemade pesto sauce.
